I made this recipe when I first bought my Ninja Foodi. I was amazed at how you could make a complete meal in one pot! Anyway, this was absolutely delicious, and even though I put chicken breasts in the pot too, they turned out perfect as well!

Ingredients:
Instructions:
SAUTE Rice pilaf, water, and butter into pot; stir to incorporate.
Place reversible rack in the pot, making sure rack is in the higher position. Place carrots & asparagus in center of rack.
Arrange chicken thighs, skin side up, around the carrots.
PRESSURE COOK on HIGH for 4 minutes
While chicken and rice are cooking, stir together warm honey, smoked paprika, cumin, and 1 teaspoon salt. Set aside.
QUICK RELEASE cooker
Brush carrots with seasoned honey. Brush chicken with olive oil, then season evenly with poultry spice and remaining salt.
BROIL for 10 minutes.
When cooking is complete, serve chicken with carrots and rice.

- 1-3/4 cups water
- 1 TBSP butter
- 4 carrots, peeled, cut in half, lengthwise
- 1 small bunch Asparagus
- 4 uncooked boneless skin-on chicken thighs
- 2 TBSP honey, warmed
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 2 tsp kosher salt, divided
- 1 TBSP extra virgin olive oil
- 2 tsp poultry spice
