Sweet Potato Hash

I've made several version of this, and keep tweeting it based on what ingredients I have around the house. I love to add peppers of any kind, and perhaps put some sausage in it.  Yummy!

Ingredients:
  • 2-3 Sweet Potatoes - peeled + cubed
  • 1 sweet Onion - chopped
  • 2 cloves Garlic
  • 2 TBSP Avocado Oil
  • 1-1/2 tsp Italian Seasoning
  • Kosher Salt

Instructions: 
Heat your pan on a griddle grill on medium/high.

Use about 1 TBSP of oil to get your pan ready for the ingredients.  When the oil is warm, add chopped onion and stir.  Give a light sprinkle of kosher salt.  Add cubed sweet potato on top and mix.  Give this about 10 minutes, only stirring once or twice - you want some beautiful brown color to start.

After about 15-20 minutes, add sliced garlic, a sprinkle of kosher salt, Italian seasoning, and a very light drizzle of oil.  Continue to cook, then taste a cube of sweet potato to see if they need more time.  You want them soft and ready to serve before removing them from heat.

These are a great side dish to accompany dinner on the grill.  Just get them started first so everything is done at the same time.
